French crepes

Crepe is a very thin type of pancake

Crêpes

Material used

– Tefal frying pan
– Ladle
– Whisk

Ingredients

Pancake dough

✔300g flour
✔1 pinch of salt
✔1 packet of vanilla sugar
✔3 eggs
✔25cl water
✔25cl milk
✔1 tablespoon neutral oil
✔1 orange juice
✔the zest of one orange
+
Flavour (Optional)
✔3 tablespoons orange blossom water
✔3 tablespoons Rum

 

The recipe

Pour the flour, salt and vanilla sugar into a bowl. Make a well and add the eggs. Mix with a whisk.

Then gradually add the milk and water while mixing.

Wash an orange well and remove the zest in a small bowl. Set aside. Squeeze the orange and pour the juice into the mixture.

You may want to blend the mixture to make it smooth. Finally add the orange zest and the flavours: rum and orange blossom. Mix the mixture well.

Proceed to cook the pancakes:

Heat a non-stick pan and oil it very lightly with a paper towel. Pour in a small ladleful of batter, tilting the pan to distribute the batter evenly. Wait until one side is cooked before turning it over. Cook all the pancakes in this way.

You can accompany them with powdered sugar, jam, chestnut cream, spread, whipped cream.

Variants

« Swirl crepes » (Crêpes Tourbillon)

Take some of the batter and add melted chocolate. Mix well and fill the piping bag of the Lekué brand.

Proceed to cooking: start by making a swirl with your chocolate batter and then pour your ladle of pancake batter over it, tilting the pan to distribute the batter evenly. Wait until it is cooked on one side before turning it over. Cook all the pancakes in this way.

Also take some batter but this time in two different containers. Add melted chocolate to both but in one double the amount of chocolate for a more pronounced colour. Mix well and fill a Lekué piping bag for the lighter chocolate and a classic piping bag for the darker chocolate.

Proceed to bake: start by making dots with the lighter chocolate and then surround them with the darker chocolate. Then pour a small ladleful of pancake batter on top, tilting the pan to distribute the batter evenly. Wait until it is cooked on one side before turning it over. Cook all the pancakes in this way.
